Is the Paella in Valencia truly different?

Found a small arrocería outside of the city center, and the original Valencian paella with rabbit and snails was unlike anything sold in tourist traps. The rice was perfectly cooked and the flavors deep. Does this match your experience?

Yes, that is the real deal, You found the key. The best paella is always outside the main streets in those small, dedicated places. The rabbit and snails version is the proper one, and when that rice is cooked right, nothing compares. I'm jealous!
